1. Eggs

If eggs are a regular in your breakfast rotation, you can easily throw in a handful of spinach to your next omelette or scrambled eggs. If you’re feeling fancy, try making a spinach quiche or for a lighter option, a spinach frittata. For a little recipe inspiration, check out our blog Paleo-Friendly Breakfast Frittatas.

2. Salads

Variety is the spice of life, so next time you make a salad, make it with spinach! Try a California-inspired salad with almonds, sliced strawberries, and goat cheese (or sliced avocado to make it vegan and dairy-free) on a bed of fresh spinach. Served with a sweet vinaigrette, it’s a major crowd pleaser and stars as either a main meal or side dish.

3. Smoothies

Spinach is the perfect green to blend into your smoothies and shakes. Because it has such a mild flavor, you can't even tell it’s in there when you add additional ingredients! We love the combo of spinach, nut butter, chia seeds, and berries blended up with your milk of choice. For a super creamy treat, mix with frozen banana, nut butter, and cacao.

Soups are one of those dishes where anything goes. Add spinach to soups, stews, and even stir-frys for a powerful pop of green! If you’re ready to kick things up a notch, try this Creamy Coconut and Spring Vegetable Soup. Two whole cups of fresh spinach leaves are blended up with other spring veggies, along with squash and coconut milk to make things extra creamy.

5. Pizza

We believe that healthy eating is a balance between ‘yummy’ and ‘good for you’. What better balance than spinach on pizza? Spinach pairs well with creamy feta or ricotta cheese, red pepper, red onions, garlic, and mushrooms. But let’s be honest, pizza is delicious no matter what you put on it. So load up your favorite veggies and enjoy!

6. Sauces

Whether you have picky eaters in the house or just don’t want to give up your favorite pasta dish, make spinach the star in your secret sauce. Chop up spinach leaves into small pieces or pureé all your ingredients until smooth. Pesto sauce, which is traditionally made with basil leaves, can easily be swapped or mixed with spinach, so throw in a handful or two for some extra green goodness!

If you’re looking to increase your vegetable intake, spinach and other dark leafy greens are a great place to start. With its subtle flavor and thin consistency, it’s easy to sneak some spinach into the recipes you already make. How do you like to incorporate more greens into your diet?
