Ingredients for Coconut Flour Cookies:
- ½ cup of coconut oil, melted
- 2 large eggs
- 2 tbsp creamy almond or peanut butter
- 1 tsp of pure vanilla extract
- ⅔ cup coconut flour
- ¼ teaspoon of baking soda
- ½ Granulated Sweetener (ex. Cane sugar, brown sugar, coconut sugar)
- Pinch of ground cinnamon
- ½ tsp of sea salt
- ½ cup of chocolate chips
Directions for Coconut Flour Cookies:
- Add the melted coconut oil, almond butter and vanilla extract to a mixing bowl and whisk until everything is combined.
- In a separate bowl, stir together the coconut flour, granulated sweetener, baking soda and sea salt until combined.
- Pour the dry ingredients into the wet ingredients and stir until a thick, sticky dough forms.
- Stir in the chocolate chips & refrigerate the mixture for 15 minutes.
- Preheat the oven to 350℉ and line your baking sheet with parchment paper.
- Scoop dough into balls on the prepared baking sheet remembering to leave room for the cookies to spread.
- Bake for 9-11 minutes or until the edges are slightly golden brown. If you like them particularly crispy, you may leave them in a little longer. But don’t over bake them – you want to maintain the chewiness and gooey texture of your coconut flour cookies.
