Dark Chocolate Chip Coconut Flour Banana Bread
This paleo-friendly chocolate chip banana bread is moist, delicious and one hundred percent guilt-free!

Ingredients:
½ cup coconut flour
½ tsp baking soda
½ tsp baking powder
1 tsp cinnamon
Pinch of salt
4 eggs
1 ¼ cup banana, mashed
1 tsp pure vanilla extract
½ cup coconut oil, melted
½ cup dark chocolate chips + extra for decoration
Directions:
1. Preheat oven to 350°F.Line an 8×4” loaf pan with parchment paper and set aside.
2. In a bowl, sift together the coconut flour, baking soda, baking powder, cinnamon and salt. Set aside.
3. Using an electric mixer, beat eggs on medium speed until pale and fluffy.
4. Add the mashed bananas and beat until well combined.
5. Add the pure vanilla extract and melted coconut oil and beat until well combined, smooth and creamy.
6. Add in the coconut flour mixture and beat until smooth.
7. Fold in the chocolate chips.
8. Let the batter sit for 5-10 minutes to thicken.
9. Pour batter into prepared pan and smooth top.
10. Sprinkle with extra chocolate chips.
11. Bake in preheated oven for 40-50 minutes, or until an inserted toothpick comes out clean. Remove from oven and allow to cool completely before slicing.
Flourless Peanut Butter Cookies
Gluten-free peanut butter cookies with just a few basic ingredients is a lighter version of this classic treat!

Ingredients:
1 large egg
1 cup natural peanut butter (unsweetened)
⅔ cup coconut sugar
2 tbsp pure maple syrup
1 tsp vanilla extract
½ tsp baking soda
½ tsp sea salt
Directions:
1. Preheat oven to 350° F.
2. In a mixer, combine all ingredients until well incorporated.
3. Roll 1” sized balls of dough and place them on a parchment-lined baking sheet.
4. Using a fork, gently make two impressions in the dough making a criss-cross pattern and flattening the balls slightly.
5. Bake for 8 to 10 minutes. Allow the cookies to cool for 10 minutes before removing from pan.
6. Enjoy with coffee, tea or almond milk!
Baked Pears with Walnuts & Honey
Cut the carbs in this lighter version of a pear crumble. Easy, light, but oh-so-tasty!

2 large ripe pears
¼ tsp ground cinnamon
2 tsp honey
¼ cup chopped walnuts
Whipped cream, optional
Directions:
1. Preheat oven to 350° F.
2. Cut the pears in half, and place on a parchment-paper lined baking sheet.
3. Use a spoon or melon baller to scoop out the seeds.
4. Sprinkle with cinnamon, top with walnuts, and drizzle ½ tsp honey over each one.
5. Bake in the oven for 30 minutes. Remove and let cool.
6. Serve with whipped cream (optional) and enjoy!
