Moist and healthy vegan muffins bursting with bananas & blueberries! The ultimate vegan breakfast muffins — gluten-free, dairy-free, and refined sugar-free.

Ingredients

3 medium very ripe bananas, mashed

¼ cup coconut oil, melted

¼ cup coconut sugar

1 flax egg (1 tbsp ground flax + 3 tbsp water, whisk together, set for 15 mins)

1 tsp pure vanilla extract

1 ½ cups gluten free oat flour

¾ cup almond meal

¾ tsp baking powder

½ tsp baking soda

¼ tsp salt

1 cup fresh blueberries, washed and dried

2–3 tbsp blueberries (optional, for topping)

 

Directions

  1. Preheat the oven to 350°F. Line a 12-cup muffin pan with muffin liners.
  2. Add peeled bananas to a large mixing bowl. Using a sturdy whisk or pastry cutter, mash bananas until smooth. Add the oil, sugar, flax egg, and vanilla. Whisk until well incorporated.
  3. Add oat flour, almond meal, baking powder, baking soda and salt. Whisk together until just incorporated, making sure no flour patches remain. Fold in blueberries.
  4. Using a large scoop, drop batter evenly into muffin cups. Press extra blueberries on top of the muffins (optional).
  5. Bake for 16-22 minutes, then allow to cool on a cooling rack. Lift out and enjoy!

These gluten-free, low sugar scones are the perfect addition to any spring brunch or dessert spread.

Ingredients

1 egg

¾ cup finely grated carrots

¼ cup maple syrup

1 tsp vanilla extract

2 ⅓ cups almond flour

½ cup shredded unsweetened coconut

2 tsp baking powder

1 tsp ground cinnamon

1 tsp ground ginger

¼ tsp ground nutmeg or allspice

½ tsp kosher salt

⅓ cup coconut oil, room temperature

3 tbsp walnuts, finely chopped

2 tsp turbinado sugar

¼ cup powdered sugar

2 to 3 tsp fresh squeezed orange juice

 

Directions

  1. Preheat oven to 375°F. Line a baking sheet with parchment paper or a silicone baking mat.
  2. Place egg, maple syrup, carrots, and vanilla in a small bowl; whisk to combine.
  3. In a larger bowl, combine almond flour, coconut flakes, baking powder, cinnamon, ginger, nutmeg, and salt; mix well. Add the coconut oil and combine using a pastry cutter (or your hands) until the mixture resembles coarse meal.
  4. Drizzle egg mixture over the flour mixture and combine with a rubber spatula until everything appears moistened. Fold in walnuts. Work the dough into a ball with floured hands and transfer to prepared baking sheet. Press into a neat 8″ disc and cut into 8 equal wedges with a sharp knife. Sprinkle turbinado sugar overtop.
  5. Bake for 23 to 25 minutes, until golden. Remove from oven and allow to cool for 30 minutes before cutting through into 8 wedges.
  6. Prepare glaze by gradually whisking orange juice into powdered sugar until desired consistency is achieved. Drizzle glaze over scones right before serving.

Classic chocolate oatmeal no-bake bars are re-invented with wholesome ingredients for a gluten-free, dairy-free, and refined sugar-free treat!

Ingredients

1/4 cup + 3 tbsp peanut butter

1/4 cup + 3 tbsp pure maple syrup or honey

1/4 cup virgin coconut oil

1/2 tsp pure vanilla extract

1/4 tsp salt

2 cups quick oats

1/4 cup cocoa powder

Directions

  1. Line an 8-inch square pan with parchment or wax. Set aside.
  2. Stir together the first three ingredients. Gently heat until the oil is melted and peanut butter is easily stir-able.
  3. Whisk in the vanilla extract and salt, stirring until completely smooth. Stir in the quick oats and cocoa powder until evenly coated.
  4. Smooth into the prepared pan, and press down with a spoon as hard as you can. Really pack it in. Freeze until firm enough to cut.
