Slow Cooker Al Pastor Loaded Tacos

This al pastor taco recipe is quick and easy to prepare, full of amazing flavor, and your slow cooker does all the work for you! Paleo-friendly, gluten- and grain-free.

Ingredients

For the pork:

2 cups fresh pineapple, diced

½ white onion, roughly chopped

2 garlic cloves

½ cup orange juice

2 tbsp white vinegar

2 chipotle peppers in adobo sauce

1 tbsp chipotle chili powder

1 tsp cumin

1 tsp salt

juice of 1 lime

2 lb pork loin, cubed

 

For the tacos:

Paleo-friendly grain-free tortillas

¾ cup pineapple, diced

½ white onion, minced

handful of fresh cilantro, minced

Paleo ranch dressing (optional)

Directions

  1. Place all pork ingredients (except for the pork) in a high speed blender and blend until smooth. Place cubed pork loin in a crockpot and cover pork with pureed mixture. Cover crockpot and cook on low for about 8 hours.
  2. Once pork has cooked through, use two forks to shred the meat and mix to coat with the cooked down sauce.
  3. To heat tortillas: place tortilla over a gas stovetop until slightly browned on both sides (about 10-15 seconds per side).
  4. To build tacos: use a slotted spoon to scoop out the meat and place in taco shell. Top with pineapple, onion, cilantro, a small amount of creamy ranch, and squeeze fresh lime juice on top!

Sweet Potato Nacho Cheese Dip

This nacho “cheese” dip provides all the cheesy nacho flavor without the cheese. Nut- and dairy-free, this recipe uses sweet potato to create a creamy base perfect for dipping. Paleo and vegan-friendly.

Ingredients

3 cups sweet potato, diced

1 ½ cups water

½ cup nutritional yeast

1 tbsp tapioca flour

1 tsp apple cider vinegar

1 tsp salt

¼ tsp onion powder

¼ tsp garlic powder

¼ tsp paprika

⅛ tsp cayenne, adjust to taste

⅛ tsp mustard powder

Crushed red pepper flakes, optional

 

Directions

  1. Add the sweet potatoes and water to a saucepan. Bring the water to a boil, then reduce the heat to a simmer. Cover and cook for 10 minutes or until the sweet potatoes are soft. Allow this to cool.
  2. Pour the contents of the saucepan into a blender along with the remaining ingredients and blend until smooth.
  3. Add the sauce back to the saucepan over medium heat and stir for 3-4 minutes until hot.
  4. If you want a thinner consistency, add water to the pan and stir.
  5. Serve warm with corn tortilla chips.
