Cut the Carbs: 3 Drool-Worthy Keto Recipes

1. Cheddar Biscuits

Enjoy these cheesy melt-in-your-mouth biscuits as a snack, or with your favorite keto meals:

Ingredients
4 tbsps melted butter or ghee
cup Coconut Flour
2 tbsp sour cream
4 eggs
¼ tsp salt
¼ tsp baking powder
1½ cups shredded cheddar cheese

Whisk together butter, sour cream, eggs, and salt. Add in coconut flour, baking powder, and cheddar cheese. Place batter into a muffin tin, and bake for 15 minutes or until golden brown. Let cool for a few minutes, then enjoy!

2. Keto Coconut Chicken Curry

Cut the carbs but keep the flavor with this super simple chicken recipe:

Ingredients
2 tbsp Viva Naturals Coconut Oil
3 garlic cloves, crushed
1 tbsp lime juice
1 lb chicken thighs
½ tsp black pepper
½ tsp sea salt
½ tsp fresh grated ginger
2 ½ tsp curry powder
¼ tsp turmeric powder
¼ cup vegetable broth or chicken stock
8 oz coconut milk

Dice chicken thighs into bite-sized pieces, and sauté in a saucepan with coconut oil. Once they’re halfway cooked, add garlic, lime juice, ginger, curry powder, turmeric, salt and pepper. Stir thoroughly so everything is coated with the spice mix. It should be a delicious, and vibrant yellow color! Once the chicken is fully cooked, stir in broth and coconut milk, and simmer until it thickens. Serve over cauliflower rice or a veggie stir-fry with a sprig of cilantro if desired. Serves two.

3. Chocolate Avocado Pudding

Enjoy this silky smooth chocolatey goodness as a guilt-free dessert or snack:

Ingredients
½ mashed avocado
2 tsp Cacao Powder
⅓ cup coconut milk
¼ tsp vanilla extract
pinch of sea salt
1 packet of powdered Stevia, or sweetener of choice

Mix ingredients together in a food processor until it’s creamy and smooth. Chill in the refrigerator prior to serving. Makes two helpings.
