Using cacao nibs instead of chocolate chips can add that special crunch without adding more sugar to your cookies. Tip - Keep in mind that cacao nibs will not melt like chocolate chips.

Ingredients for Coconut Flour Cookies:

  • ½ cup of coconut oil, melted
  • 2 large eggs
  • 2 tbsp creamy almond or peanut butter
  • 1 tsp of pure vanilla extract
  • ⅔ cup coconut flour
  • ¼ teaspoon of baking soda
  • ½ Granulated Sweetener (ex. Cane sugar, brown sugar, coconut sugar)
  • Pinch of ground cinnamon
  • ½ tsp of sea salt
  • ½ cup of chocolate chips

Directions for Coconut Flour Cookies:

  1. Add the melted coconut oil, almond butter and vanilla extract to a mixing bowl and whisk until everything is combined. 
  2. In a separate bowl, stir together the coconut flour, granulated sweetener, baking soda and sea salt until combined. 
  3. Pour the dry ingredients into the wet ingredients and stir until a thick, sticky dough forms. 
  4. Stir in the chocolate chips & refrigerate the mixture for 15 minutes. 
  5. Preheat the oven to 350℉ and line your baking sheet with parchment paper.
  6. Scoop dough into balls on the prepared baking sheet remembering to leave room for the cookies to spread. 
  7. Bake for 9-11 minutes or until the edges are slightly golden brown. If you like them particularly crispy, you may leave them in a little longer. But don’t over bake them – you want to maintain the chewiness and gooey texture of your coconut flour cookies.
  8. Ready to try them? We bet you are! Let your cookies cool for at least 15 minutes on the baking sheet and then indulge in an explosion of flavor.
