Cooking & Baking with Cacao Nibs

If you love chocolate, but want to keep your cravings under control, you’ve gotta try cacao nibs. They’re the perfect way to satisfy your sweet tooth without all the added sugar and junk. Here are some of our favorite cacao nibs recipes:

Mint Chocolate Chip Cauliflower Smoothie Bowl

Ingredients

⅓ cup raw cashews
1 cup Frozen organic florets (don’t need to steam or wash these)
¼ cup fresh mint leaves (or 4 drops food grade peppermint essential oil)
1½ cup hemp milk
1 serving vanilla protein
Handful organic baby spinach
1-2 tbsp cacao nibs

Directions

Heads up, this is going to be thick! Blend everything but the cacao nibs for about two minutes, adding the cacao nibs during the last 10 seconds. Pour the mixture into a bowl, and top with more cacao nibs, mint, and coconut chips. A big shout out to Lee from America for this amazing inspo!

Chewy Cherry Almond & Cacao Nib Granola Bars

Ingredients

2 cups rolled oats
1 ⅔ cups toasted buckwheat
¾ cup sliced almonds
¼ cup ground flax meal (optional)
½ cup cacao nibs
½-1 cup dried cherries
¾ cup honey (may use brown rice syrup if vegan)
1 cup creamy almond butter
¼ cup coconut oil
2 teaspoons vanilla extract
pinch of salt

Directions
Line a 9x13 inch baking dish with parchment paper. In a medium bowl, combine the oatmeal, buckwheat OR puffed brown rice cereal, sliced almonds, flax meal, cacao nibs, and dried cherries.

In a small saucepan, add the almond butter, coconut oil and honey. Set the pot over medium heat, stirring often until melted and smooth. Once the mixture starts to bubble, remove from the heat and stir in the vanilla and salt. Pour the almond butter mixture over the oats and stir until combined. Press into the prepared pan. Cover the bars and place in the fridge for at least one hour, or until set. You can find the original recipe over at Half Baked Harvest!

Triple Chocolate Chia Pudding

Ingredients

¼ cup chia seeds
½ cup coconut milk
½ cup almond milk
¼ cup cacao powder
2 tbsp maple syrup
1 tbsp cacao nibs
1 tbsp dark chocolate chips

 

Directions

Mix the chia seeds, coconut milk, almond milk, cocoa powder, and maple syrup in a bowl until well combined. Let sit for five minutes, then give it another mix before covering and placing it in the fridge for one hour. Remove from fridge and mix in the cacao nibs and dark chocolate chips. Serve with fresh fruit, nuts, or more chocolate. This amazingly delicious recipe comes from Choosing Chia.
